Delicious oil free beet hummus

I love making hummus at home because I can make it without oil. Chickpeas and tahini blended together give a very creamy texture. In this recipe, beets are added for a rich color and a sweeter tasting hummus. Easy to make, healthy and very versatile. Try it, you will not be disappointed!

Enjoy with seed crackers, whole grain crackers, pita bread or crunchy vegetables

 

Ingredients: 

  • 1 can chickpeas (398 mL), rinsed and drained
  • 2 cooked beets, medium size (3 cm diameter), peeled
  • 1 ½ tbsp. tahini paste
  • Juice from 1 lemon
  • 1 tsp. ground cumin
  • 2 small garlic cloves, minced
  • Salt and pepper to taste

Preparation

  • Put all ingredients in a high speed blender and blend until smooth. You may have to stop and stir with a spoon once in a while and continue blending after doing so.
  • Taste and adjust.
  • I started with the juice of half a lemon and found that it needed more acidity so I ended up using a whole lemon.
  • You may also need to add more salt and blend again as salt will help the flavors come out.
  • If not creamy enough, add more tahini. I used a tahini paste that was quite thick, depending on the texture of the tahini, you may need to add more.

    Enjoy with seed crackers, whole grain crackers, pita bread or crunchy vegetables

    You can drizzle a little olive oil on top when serving.
