12 Jan Raw chocolate chip cookies
Another version of energy balls or raw cookies. It’s good to change them up once in a while so that you can keep a rotation going in your fridge. These are so quick and easy to make, there is no excuse to not always have some ready for snacking on. Because they contain no added sugar, because they are a good source of protein and healthy fats, and because they are high in fiber, these are highly superior to any packaged snack that you can get at the supermarket or in fast food restaurants or coffee shops.

Ingredients (10 cookies)
- 1 Cup pitted dates
- 3/4 Cup raw cashews
- 3/4 Cup raw walnuts
- 1 ½ tbsp. coconut oil
- ½ tsp. salt
- 1 tsp. vanilla extract
- 2 tbsp. dark chocolate chips
- Process the dates in a food processor until well chopped. Add all other ingredients except chocolate chips and process some more to obtain a smooth paste. Add chocolate chips and process a little more. Form cookies by hand and refrigerate for about an hour so they become firm. Can be kept in the refrigerator or in the freezer.
